Carson City will be losing its Black Bear Diner come Feb. 3 but will be gaining a restaurant renamed and reimagined, according to Federal Hotel and Max Casino General Manager Brett Hunn.
Seven Grille will help elevate the property as it becomes a more “sophisticated casino,” Hunn told the Appeal on Tuesday. The restaurant will serve nutritious, farm-to-table style cuisine for breakfast, lunch and dinner, he said.
“It’s going to be really what the people like and what they want,” Hunn said, adding the menu will be “ever evolving.”
Black Bear Diner, part of the Redding, Calif.-based chain, opened in the casino in 2016, replacing the Carson Station restaurant. Hunn said Max Casino’s parting with Black Bear was amicable.
“As we bid farewell to Black Bear, we wish them continued success. We support everything they’re doing, and they support everything we’re doing,” he said.
Hunn said the move will provide the hotel/casino with more freedom to have specials, appetizers and other select items. While not a full-scale remodel, the aesthetic and culinary changes will match other projects on the property including the ongoing remodel of the 91 rooms of the Federal Hotel, he said.
Hunn didn’t disclose the specific costs of the projects but said they represent a significant investment in the Carson City market.
“There are a lot of things changing in Carson, and we really want to meet demand in what expectations are,” he said.
The transition to Seven Grille will occur at dinner on Monday, a soft launch. Hunn said the restaurant’s 20-25 employees will be staying with the new eatery.
“During this soft launch, guests can enjoy a thoughtfully prepared menu in our current space while we work to expand our offerings and rebrand the restaurant to create a sleek, sophisticated ambiance. These exciting updates will further enhance the dining experience and reflect our commitment to excellence,” reads a news release about the change.
